Picture the scene: It’s the middle of the week, the cupboards aren’t exactly overflowing so you decide something on toast is your best bet. Hardly inspiring, you might think, but a toast-based meal most certainly doesn’t have to be boring; there are all sorts of ways to make our easiest meal into one of our most exciting.

  1. Avocado and sundried tomato

We all know by now that avocados are packed full of nutrients. And, their buttery, nutty flavour also means they’re rather delicious. Combine the creamy softness of avocado with the sharp tanginess of sundried tomato, and you have a sophisticated meal that’s ready in about four minutes.
 

How to prepare: Pit your avocado and empty the contents onto your toast (make it sourdough for added refinement points). Roughly smash the avocado with a fork and spread across your bread. Top with salt, pepper, a squeeze of lemon and a smattering of sundried tomatoes. Delish!
 

  1. Pesto and lemon zest on toast

You might have already looked in your fridge and decided that it’s completely bare. You have half a lemon, a half-finished tub of cream cheese and some pesto that you used with your pasta last week. Not a meal in sight – or is there? This tasty recipe is perfect for concocting a meal out of thin air.

 

How to prepare: Spread soft white cheese onto hot buttered toast. Add a smear of pesto (you can do that fancy thing that chefs do with a spoon if you want to go all out) and grate a little lemon zest on top. Et voila! The nicest meal you’ve ever had with an almost empty cupboard.

  1. Brie and caramelised onions

Completely forgot you were holding a dinner party this evening and attempting to make something fancy without the fuss? This is the sort of dish that you can legitimately serve to friends as a starter and expect to be complimented on your culinary prowess. Simple and delicious, you’ll wonder why you ever made anything else.

 

How to prepare: Heat butter and olive oil and caramelise your onions on a very low heat for around 30 minutes. 10 minutes in, add a teaspoon of sugar to add extra sweetness. Stir every 5-10 mins to allow the onion to brown, not burn. When you’re satisfied, spread the onions over toasted ciabatta with some creamy brie on top. Add a little balsamic vinegar for extra restaurant-worthy dish points.
 

  1. Open Provençal tuna melt

This is most definitely not your average tuna melt. It’s packed with flavour and nutrients and you probably already have most of the ingredients in your fridge. If you fancy elevating your regular tuna sandwich into a delicious dish fit for a king, then we can help.

You’re craving takeaway pizza, but your wallet and your waistline won’t allow it. Consider, then, this easy, cheats pizza that is almost as delicious and definitely kinder to your diet.

 

How to prepare: Toast a couple of slices of whatever bread you have in the cupboard and then cover with a light layer of tomato sauce (a bruschetta or pizza base sauce would be perfect but tomato puree or even pasta sauce would work), sprinkle liberally with cheese and choose your favourite toppings such as mushroom or pepperoni. How to prepare: Toast some crusty bread and allow to cool a little before drizzling lightly with olive oil. Peel a garlic clove and rub across the surface of the toast. Add a little cracked black pepper for even more oomph.

If you’re looking to satisfy your sweet tooth, then the next three options are for you. This unusual combo is far from the obvious choice but we’re sure you’ll love it. The creaminess of the brie, the sweet tang of the cherries and the full flavour of the nuts; it’s a taste sensation and a million miles better than jam and peanut butter.
 

How to prepare: Place thinly sliced servings of brie on your toasted bread. Next, scatter a generous helping of sweet chopped cherries, and finally garnish with some smashed pecans.
