Blueberry Pancake Stack
Makes enough for 2
Ingredients

50g self-raising flour

1 tbsp caster sugar

15g melted butter

1 small/medium egg

60ml milk

150g pack blueberries

For serving – Golden syrup or honey & Greek yogurt
Method
Place the flour and sugar into a mixing bowl. Whisk in the melted butter, egg and milk to make a thick smooth batter. Gently fold in a handful of blueberries. Brush the SnackMaster plates with a little vegetable oil, plug in and allow the unit to heat. Spoon approx 1 tbsp batter to the centre of the bottom plate, close the lid and allow to cook. Check after approx 2 minutes and if there are small bubbles on the batter mix, gently flip, and cook for a further 2 minutes. Repeat with the remaining batter mix, covering the cooked pancakes with some foil to keep warm. Serve warm, in a stack drizzled with some syrup and topped with the remaining blueberries and a dollop of Greek yogurt.
