Smoked Mackeral Melt

Makes 2

It's a richer, more flavorful variation of a tuna melt, with the smokey flavour of the mackerel adding a unique twist.

Ingredients

  • 4 slices of wholemeal bread

  • Softened butter

  • 1 smoked mackerel fillet, skinned and flaked

  • 1 medium tomato, deseeded, and chopped

  • 2 spring onions, finely sliced

  • 1 tbsp capers, chopped

  • Squeeze of lemon juice

  • Ground black pepper

  • 2 tbsp mayonnaise

  • 60g grated cheese of your choice



Method

Butter all 4 bread slices, on 1 side only, these will be the outside of your sandwich.


Place the remaining ingredients into a bowl and mix to combine


Preheat your Solo SnackMaster.


Assemble your sandwiches using the mixed filling.


Toast each sandwich for 4-5 minutes until golden.
