Sweetcorn and Feta Fritters
Makes 5-6 fritters
Ingredients
130g cooked sweetcorn (if you are using canned, drain well)
60g self raising flour
½ tsp garlic granules
Pinch chill flakes (optional)
Freshly ground black pepper
60ml milk
1 medium egg
1 tbsp chopped chives
60g crumbled feta cheese
Vegetable oil for brushing

Serving suggestion – Zesty Avocado Salad
1 small avocado, peeled and diced
1 large vine tomato, diced
3 tbsp canned black beans
2 tbsp sweetcorn
½ lime, juiced
½ tbsp olive oil
Salt and pepper
1 small handful of coriander leaves, finely chopped
Method
Place the flour, garlic granules, chilli flakes and black pepper into a small mixing bowl, stir to mix. Beat the egg and milk together in a small cup Pour into the flour mixture and stir with a fork to combine, do not overmix. Stir in the sweetcorn, feta and chives. Heat up your Solo SnackMaster, once hot brush both plates with a little oil. Place a large spoonful of the batter mix onto the middle of the hot plate, close the lid and allow to cook for 2 ½ minutes before opening the lid and turning the fritter with a non stick spatula. Cook for a further 2 ½ minutes before removing to a warmed plate, cover with a piece of foil and repeat with the remaining batter mix. Why not try topping the fritters with a fried egg (make this in your SnackMaster) Delicious served with a drizzle of sriracha sauce and the Zesty Avocado Salad. For the salad, combine all the ingredients together, refrigerate before serving.
