Blue Cheese and Caramelised Onion Dipping Toast

Please use a wooden or silicone spoon for stirring your onions, this will ensure your snack maker does not become scratched.

Serves 2 as an accompaniment

Ingredients

  • 2 slices of rustic white bread

  • ½ small onion, thinly sliced

  • ½ tbsp oil

  • ½ tbsp brown sugar

  • ½ tsp vanilla extract

  • 1 tsp Dijon mustard (optional)

  • 40g sliced blue cheese of your choice

  • Softened butter

  • Soup of your choice



Method

Preheat your Solo SnackMaster.
Add the oil to the bottom plate and cook the onions until just starting to colour. Close the lid between stirring the onion to speed up the cooking time.
Stir in the sugar and cook for a few more minutes until starting to caramelize, stirring continuously.
Spoon these out onto a small plate, carefully wipe the bottom plate.
Butter the outside of the 2 slices of bread.
Assemble the sandwiches using the mustard, blue cheese and cooked onions, ensuring the buttered bread is towards the outside
Cook for approx 4-5 minutes until golden.
Heat up your favourite soup, cut the hot dipping toast into 4 quarters and share between 2.
